A popular Vietnamese fusion restaurant on Washington Avenue has announced plans to open a second restaurant in the Old Port to be headed by former staff.
Cong Tu Bot, a James Beard Award-nominated restaurant, is partnering with the crowdfunding platform NuMarket to fundraise for the new “concept” restaurant, Lidos 2, to be located at 30 Market St. the site of the former Pat’s Pizza.
It will be a multilevel restaurant and will have a takeout counter during the day. They plan to serve grilled items and hotpot in the dining room, and “Chinatown-style baked goods, boba and rice plates” at the takeout counter, according to a press release.
Lidos 2 will be run by longtime Cong Tu Bot chef Bounahcree Kim. Kim, a chef with 17 years’ experience known colloquially as “Bones,” is “excited to serve up a deeply personal and fun menu highlighting Khmer-Chinese food as a first-generation Cambodian American,” according to the press release.
Kim, along with Cong Tu Bot co-owners Jessica Sheahan and Vien Dobui, will assume leadership positions of the new venture.
“Over the past years, we’ve poured our hearts and souls into creating a vibrant and inclusive dining experience that defies boundaries and want to continue doing this,” Sheahan said in a press release.
NuMarket works with food and beverage companies that rewards contributors with 120 percent back that they can use to support the business.
Lidos 2 is slated to open this coming fall. The group claims to be the first Portland business to use NuMarket, and their fundraising campaign runs through Aug. 11.
